Question : Worker safety has been a constant concern in meatpacking from the beginning of industrial meat production (at least, on the part of the workers). What kind of progress has the industry made in reducing injuries and illness among its employees? We expect that students will produce a paper/project that is 8-9, text pages in length; that the paper will be double-spaced; will include suitably handled references and citations (as footnotes-not endnotes). Each project should also include a Works Cited / Biblio. page(s). We expect that you will use one of the standard fonts and point sizes, e.g., Times, Arial, et al. (please, no Gothic or other non-standard fonts). You should utilize an 11 or 12-point size with your font. (If you are not accustomed to writing college papers, there are standard protocols for students, besides the ones just enumerated. We will refer you to them going forward). Your papers/projects will all be in the area of contemporary food production – the topic we are addressing in this last section of the semester. Our current readings focus upon meat production using two monographs The Chain and Big Chicken. We expect that most papers will address some aspect of this subject, you will need to do some additional digging / library research.
