Objective: To research the background and evaluate the flavour profile of one
specific wine sold at the Chefs’ House Restaurant that matches with a menu item on the current lunch or dinner menu.
Method:
This assignment is to be completed individually or in pairs. You need to complete the following:
- Name your chosen wine and include all appropriate information:
- producer’s name and location o the vintage of the bottle o the grape varietal, style, and appellation o the size of the bottle and the alcohol %
- Research and share some interesting details about:
- the grape varietal o the appellation, region, country o the winery and/or the brand
- The wine’s price at the Chefs’ House (versus at the LCBO or the winery)
- A photograph of the actual label (your own photo or copy & paste from internet)
- Tasting notes for your wine (use our class tasting sheet)
- Create a tag line for the wine, using 3 or 4 descriptors, which would be easy for service staff to use when verbally selling this beverage (Example: “This Riesling has refreshing green apple fruit with crisp acidity and a long finish”)
- Discuss, in detail, what Chefs House lunch or dinner menu item would be a good match for your chosen wine and explain WHY; give specific examples of what ingredients would go well with your wine and why they work together.
SUBMISSION FORMAT
- The word processed assignment needs to be in Arial or Times New Roman 12 font, 1.15 line spaced and professionally presented, accompanied by a separate professional cover page.
- Maximum 4 pages (not including cover page, index, photos and references)
- If you use researched information, including speaking to someone in person, you must properly reference using the APA format learned in your College English class
- The assignment is expected to be free of spelling and grammatical errors.
- The assignment must be handed in via Brightspace.
